Just a couple of recipes to share from my recipe challenge. I really couldn’t have picked a better book than River Cottage Everyday for the variety.
As we come into Autumn, I tried to squeeze in a couple more summery recipes before the cold set in.
Spiced and seedy green beans made a great side, and a better leftovers lunch. Toasted almonds, coriander and cumin seeds gave everything a good crunch, and I of course keep the beans on the al dente side.
Something on the softer side came in the form of a pea and ricotta salad. I used frozen petits pois, as fresh were well past their best, but the lemon juice dressing and soft cheese gave everything a lift. Definitely a recipe to remember for next summer.
