A is for apricots

photo(1)Apricots are a summer specialty and are in all the shops and markets at the moment. Despite their delicious sweetness, they have a low GI and are full of fibre so a great snack for weight management. Fresh apricots are a source of vitamin C, potassium, vitamin E and a range of antioxidants known as carotenes: beta-carotene, lutein and cryptoxanthin. These carotenes are good for cancer prevention, eye health and bone health.

Cooking apricots helps the carotene and soluble fibre to be better absorbed in the body, so try out my apricot and almond cake! Dried apricots lose some of their vitamin C but are still rich in potassium and iron – 3 dried apricots make up one of your 5 a day.
