Sorry I’ve been a little quiet, I’m really not sure where the time has gone! Some weeks I did lots of recipes, some…not so much.
But here’s a little catch up for you..
I tried out a new way with French beans and really liked it as a side – they were slowly cooked in garlic rather than quickly boiled like I’d usually do.
The brief summer spurred me onto colourful salads, and this carrot and orange one really gave me a boost. There was supposed to be chervil in there but I couldn’t find any, so a parsley it was!
Another little summery boost was a peach melba smoothie, which was super simple with just peaches, raspberries and orange juice. Raspberries are really cheap at the moment so I have been gorging a little, oops.
I’ve been having breakfast on the run at work recently, so I wanted to mix it up a bit rather than just having my usual oats and whey. I made the muesli from the River Cottage book and it made a really nice change. I swapped the soaking liquid from orange juice to milk, just because it was easier for me, and added a fruit yoghurt, sunflower seeds, almonds, raisins and a chopped apple to my oats. A winner!
