A thoroughly beany affair

photoSometimes it’s nice to lose the meat and opt for a hearty veggie meal instead. This 3/4/5 bean chilli gives you all the protein you could need with the added hit of fibre, vitamins and minerals. Chickpeas are particularly rich in magnesium and folate (find out more here) and kidney beans pack a high zinc and potassium punch. Add in a colourful array of vegetables and you have yourself a very easy, delicious meal.

You will need:

1 red onion, chopped

2 peppers, chopped

1 tin of chopped tomatoes

1 tin of chickpeas

1 tin of 3-bean salad, nothing added

1 tin of kidney beans

1 tbsp harissa paste

2 tsp paprika

sprinkle of dried chillies

Sweat the onion in a little oil (I use rapeseed) until soft then add the peppers and any other veg you fancy using; mushrooms are great. Add your tins of beans, then stir in the spices. Everyone tastes to spice differently so the amount of chilli or harissa is entirely personal preference. Add a good grind of pepper and a pinch of salt. Add the chopped tomatoes and a touch of water, bring to the boil and simmer for a good 20 minutes or so to soften everything up.

Accompany with roast sweet potato, pitta bread or rice and top with some steamed kale or spinach. Dig in!
