I love houmous, I love guacamole and I love avocado, and this combines them all into a wonderful dip. It needs only 3 ingredients really: avocado, chickpeas and lots of lemon
Cut the avocado in half and scoop out the flesh into a blender. Rinse a tin of cooked chickpeas in cold water then pop into the blender with the avocado. Blitz up until it comes into a paste.
Squeeze the juice of one lemon into the paste and add a little water if it is very thick. Add a little salt and pepper for seasoning. Blitz again until all combined.
Chop up some carrot sticks and get dipping or smother onto some oatcakes – delicious!
