Hidden grain bites

photoYou’ll never guess what’s in these……couscous! Along with some other goodies, these will really fill you up and keep you going. Great for using up excess easter eggs too! Chia seeds are rich in omegas and protein, filling you up for longer. Add an combination of fruits, nuts and seeds, whatever takes your fancy!

100g dark chocolate (or an easter egg!)

75g cooked couscous

50g coconut oil

2 tbsp cocoa

3 tbsp golden syrup

1 tsp chia seeds

handful of raisins or any dried fruit

handful of chopped walnuts or other nuts

Leave the cooked couscous to cool. Melt the coconut oil, chocolate, cocoa and syrup in a pan and stir to combine. Add the couscous, nuts and raisins and mix well. Transfer to a non-stick tin (I used a regular-sized round cake tin) and be sure to use some greaseproof paper if you aren’t convinced of how non-stick your tin is! Pop into the fridge to chill for a couple of hours then cut into bite-sized chunks. These haven’t lasted very long….
