For those who supplement with protein, these pancakes are fab! Recipe from the Optimum Nutrition recipe book.
1/2 cup whey protein (I had banana flavoured)
1/2 cup milk
1 cup oats
1 tbsp flour (I used rice flour but any is fine)
Blitz everything in a blender and cook in batches in a non-stick frying pan or with a little oil – careful they cook quick!
They are nice topped with Greek yoghurt, or drizzled with a bit of maple syrup like any pancake. The texture is definitely different to a an American-style pancake, but not necessarily in a bad way. I think it’s the same with anything with some whey protein in it!
